French oak imparts a soft oak flavour and you’ll notice a sweet spice flavour with hints of allspice and cinnamon. 

Roasting wood chips produce flavour compounds not present in raw wood.

A dark (heavy) toast is the most drastic toast you can put on oak. It results in a smoky flavour.
